Dual Fuel Cooking

It’s time to consider Dual Fuel for your new range
 Wolf Dual Fuel Oven
When it comes to cooking, much of the world is divided into one of the two camps: gas fuel or electric.  There is, however, a growing portion of the population that is embracing a cooking method that utilizes the best of both worlds  – gas and electric – in one unit.  It is called dual fuel.
Before we get into dual fuel, let’s look at the two different range fuels – gas and electric.
A gas range uses heat created by the burning of gas – usually propane or natural gas – to create heat both on the cooktop as well as in the oven. An electric range uses electric elements to create heat in both the cooktop and oven.
As mentioned at the top, dual fuel range gives you the best of both options, offering a gas cooktop with an electric oven.   If you’re a serious cook (or like to think you are one), you will love the benefit of a dual fuel range.  It allows you to utilize the best of both an electric range oven and gas cooktop.

10 tips for BBQ Success

 Canadian Summer and BBQ Season

With the May 24 Long weekend being the unofficial launch to season we thought we would help kick-start things off right with some helpful BBQ tips.

Buy from Local Butcher in Midland
Your Butcher, Your Friend
Avoid packaged steak, start buying your meat from a local butcher or the butcher at your local grocery store.
Fresh is always better.

Canadian Grade BeefGrade
Spring for Canadian Prime or Certified Black Angus steaks if you can.  choice-grade steak is a good, less expensive alternative.
Marbleized T-Bone Steak
Marble-iscous
Request a cut with marbling. Marbling is the white streaks of fat that are in the meat, they add flavour and keep your steak juicy.

        4. 20 minutes before cooking, remove your steak from the refrigerator, a cold steak will not cook evenly.

5.  A sturdy pair of tongs, a brush, and a grill are all the only tools you need for a great tasting steak.

6.  A properly heated grill cooks the best, so making sure your grill is preheated is essential.  To test if it is hot enough, hold your hand over the grates, 2 seconds should be all you can hold it there for if it is preheated correctly.

7.  A seared crust is what you want for your steak, and the way to obtain that is to leave your steak alone. The constant movement of a steak, before it is ready, will only cause it to stick to the grates.

8.  Cooking your steak to its desired doneness can sometimes be tricky.
Using a touch test can help.

  • soft and spongy = a rare steak
  • springs back = a medium steak
  • firm = well-done steak

9.  Under cooking your steak is far better than overcooking your steak.
You can always pop it back on the grill to cook a little longer, but you cannot un-cook something, once it is done.

10.  Letting your steak rest at least 5 minutes after removing it from the grill, will produce a juicier steak by allowing it time for the juices to settle.

Steam Ovens Review

Review of the new
Bosch Benchmark Steam Convection Oven

Bosch has introduced a new and extremely versatile kitchen appliance: The Bosch Benchmark Steam Convection Oven.   The more that I read about the different uses and applications of this product, the more excited I got.
Foods prepared using convection always turn out more moist and juicy.  By introducing steam, food stays closer to its natural state, and it has better flavour, texture and is more nutritious.
One of the things about this appliance that most appeals to me is its versatility: you are going to find many ways to use this oven when it comes to mealtime.  Whether you are a professional level chef or the main cook at home, it’s going to provide unparalleled flexibility for preparing dishes.

Why buy a Warming Drawer

Families today have very busy schedules. With both parents working and our children being involved in extracurricular activities, it is difficult to get everyone to sit down and eat dinner at the same time. That’s one place where a warming drawer would be extremely helpful.

Barber and Haskill Warming Drawer SelectionAlmost all warming drawers come with vents that control the air flow and therefore the humidity. This feature allows you to keep

  • moist food moist,
  • tender food tender and
  • crisp food crisp

    Jenn-Air Slide- In Induction Range

Review of the New Jenn-Air Slide-In Induction Range

Jenn-Air has made some big steps this year with the introduction of their new slide-in range line up including the highly anticipated induction range.  It is truly a unique piece.  This front control range will fit a regular freestanding opening without the mess and fuss of adding a trim to the back of the range.  But first let me take a step back and explain induction cooking.

    What is induction cooking?

    • Induction cooking produces the fastest, safest and easiest to clean cooking surface available on the market today.
    • Induction technology uses the pot as the heat source without heating the glass top directly. This process makes for a very fast and efficient transfer of heat.
    • The cooking surface under the pot will be only warm after cooking not hot as on a traditional glass surface.

    Why Cook with Convection Ovens?

Convection ovens are the most flexible oven in the marketplace today.

They are more than just ideal for cooking. You have so many more cooking options such as convection warming, roasting, re-heating, baking and more. No matter what you are cooking whether you’re roasting a turkey or baking croissants, convection ovens cook/bake more evenly and thoroughly than the conventional oven.

    Why cook with Convection Ovens
With convection cooking, you have the convenience of being able to place several trays of foods in the oven at the same time and get even results on everything. You also don’t have to worry about the transfer of flavours from other foods.  You can cook salmon and apple pie at the same time with confidence. Convection cooking can roast, brown and crisp food more efficiently than a conventional oven but with the speed of a microwave. Convection cooking also reduces food shrinkage. Anything that you have cooked in a conventional oven can also be cooked in a convection oven but with much better results.
